Breakfast Burritos Recipe

Start your day with hearty and delicious breakfast burritos! Packed with eggs, cheese, and your favorite fillings, they’re perfect for meal prep or a grab-and-go breakfast.

Equipment

  • Non-stick skillet
  • Spatula
  • Medium mixing bowl
  • Knife and cutting board
  • Foil or parchment paper (for wrapping)

Ingredients
  

  • 6 large eggs
  • 1/4 cup milk optional, for creamier eggs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter or oil
  • 4 large flour tortillas burrito-sized
  • 1 cup shredded cheddar cheese or cheese of choice
  • 1/2 cup cooked breakfast sausage bacon, or chorizo (optional)
  • 1/2 cup diced potatoes or hash browns cooked
  • 1/4 cup salsa optional
  • 1/2 cup diced vegetables e.g., peppers, onions, spinach

Instructions
 

  • Cook the Eggs:
  • In a medium bowl, whisk together the eggs, milk (if using), salt, and pepper. Heat a non-stick skillet over medium heat and melt the butter. Pour in the egg mixture and gently scramble until soft and fluffy. Remove from heat.
  • Prepare the Fillings:
  • If using bacon, sausage, or chorizo, cook it in the skillet until browned and crispy. Set aside.
  • If including potatoes or vegetables, sauté them until tender.
  • Warm the Tortillas:
  • Warm the tortillas in a skillet or microwave to make them pliable.
  • Assemble the Burritos:
  • Lay a tortilla flat and add a portion of scrambled eggs, meat, potatoes, and sautéed vegetables. Sprinkle with cheese and drizzle with salsa, if desired.
  • Roll the Burritos:
  • Fold in the sides of the tortilla and roll it tightly into a burrito shape.
  • Serve or Store:
  • Serve fresh: Enjoy immediately while warm.
  • Meal prep: Wrap each burrito in foil or parchment paper and store in the fridge for up to 4 days. For longer storage, freeze for up to 3 months.
  • Reheat:
  • From the fridge: Heat in the microwave for 1-2 minutes.
  • From frozen: Microwave for 3-4 minutes, flipping halfway through, or reheat in the oven at 350°F for 20 minutes.
