  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 cups fresh broccoli florets
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce (low sodium)
  • 1/4 cup brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon ketchup
  • 1/2 teaspoon ground ginger

Preparation
  1. Cut the chicken thighs into bite-size pieces and season lightly with salt and pepper.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 7-8 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, toss in the broccoli florets and sauté for 2-3 minutes until bright green and slightly tender. Add the minced garlic and stir for an additional minute until fragrant.
  3. In a bowl, whisk together the soy sauce, brown sugar, apple cider vinegar, ketchup, and ground ginger. Pour this mixture into the skillet with the broccoli and bring it to a gentle simmer.
  4. Add the chicken back to the skillet, stirring to coat everything in the sauce. Let it simmer for another 2-3 minutes to meld the flavors.
  5. Serve your Bourbon Chicken with Broccoli over a bed of warm rice and enjoy.

Notes

For extra flavor, marinate the chicken in the sauce for 30 minutes before cooking. Use fresh broccoli and garlic for the best results. Adjust sugar and vinegar in the sauce to taste.
