Method
Prepare the Crust
- Preheat your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs with the melted butter and mix until well coated.
- Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then allow it to cool while you prepare the filling.
Make the Filling
- In a large mixing bowl, beat the softened cream cheese and sugar until smooth.
- Add in the sour cream, eggs, and vanilla extract. Continue to beat until everything is fully combined and creamy.
Bake the Cheesecake
- Pour the filling over your cooled crust. Bake in the oven for 50-60 minutes, or until the center is just set with a slight jiggle.
Chill
- Allow the cheesecake to cool at room temperature for an hour before refrigerating for at least 4 hours, or overnight if possible.
