Ingredients

  • For the Blueberry Filling:
  • 4 cups fresh or frozen blueberries
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • ½ teaspoon lemon zest
  • For the Biscuit Topping:
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup whole milk
  • 4 tablespoons unsalted butter melted

Equipment

  • Mixing bowls
  • Whisk
  • Measuring cups and spoons
  • 9x9-inch baking dish (or similar size)
  • Spatula or spoon

Method

  1. Preheat Oven:
  2. Preheat your oven to 375°F (190°C). Lightly grease your baking dish.
  3. Prepare the Filling:
  4. In a mixing bowl, combine blueberries, sugar, cornstarch, vanilla extract, lemon juice, and lemon zest. Stir until the blueberries are evenly coated. Pour the mixture into the prepared baking dish.
  5. Make the Biscuit Topping:
  6. In another bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk and melted butter, stirring until a thick batter forms.
  7. Assemble the Cobbler:
  8. Spoon dollops of the biscuit topping over the blueberries, leaving some gaps to allow steam to escape and for the filling to bubble through.
  9. Bake:
  10. Place the cobbler in the oven and bake for 35–40 minutes, or until the topping is golden brown and the blueberry filling is bubbling.
  11. Cool and Serve:
  12. Allow the cobbler to cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or a dollop of whipped cream.
