Ingredients
  

  • For the Blueberry Filling:
  • 4 cups fresh or frozen blueberries
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • ½ teaspoon lemon zest
  • For the Biscuit Topping:
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup whole milk
  • 4 tablespoons unsalted butter melted

Instructions
 

  • Preheat Oven:
  • Preheat your oven to 375°F (190°C). Lightly grease your baking dish.
  • Prepare the Filling:
  • In a mixing bowl, combine blueberries, sugar, cornstarch, vanilla extract, lemon juice, and lemon zest. Stir until the blueberries are evenly coated. Pour the mixture into the prepared baking dish.
  • Make the Biscuit Topping:
  • In another bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk and melted butter, stirring until a thick batter forms.
  • Assemble the Cobbler:
  • Spoon dollops of the biscuit topping over the blueberries, leaving some gaps to allow steam to escape and for the filling to bubble through.
  • Bake:
  • Place the cobbler in the oven and bake for 35–40 minutes, or until the topping is golden brown and the blueberry filling is bubbling.
  • Cool and Serve:
  • Allow the cobbler to cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or a dollop of whipped cream.
