- In a large mixing bowl, add the almond flour, vanilla protein powder, coconut flour, and a pinch of salt. Stir well to ensure even distribution of ingredients.
- Pour in the Greek yogurt, honey (or maple syrup), and vanilla extract over the dry mixture. Mix until the mixture begins to combine.
- Gently fold in the blueberries.
- With clean hands, take a tablespoon of the mixture and roll it into a ball. Place on a lined tray or plate and repeat until all the mixture is shaped.
- Bake them in the fridge for about 30 minutes to set.
