Ingredients
  

Dry Ingredients
  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup coconut flour
  • 1 pinch salt
Wet Ingredients
  • 1/4 cup Greek yogurt
  • 1/2 cup blueberries (fresh or frozen) Make sure frozen blueberries are thawed and drained.
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a large mixing bowl, add the almond flour, vanilla protein powder, coconut flour, and a pinch of salt. Stir well to ensure even distribution of ingredients.
  2. Pour in the Greek yogurt, honey (or maple syrup), and vanilla extract over the dry mixture. Mix until the mixture begins to combine.
  3. Gently fold in the blueberries.
  4. With clean hands, take a tablespoon of the mixture and roll it into a ball. Place on a lined tray or plate and repeat until all the mixture is shaped.
  5. Bake them in the fridge for about 30 minutes to set.

Notes
