Ingredients
  

For the cheesecake bars
  • 1 package cinnamon rolls (about 8 rolls) Make sure they are Halal-compliant.
  • 8 oz cream cheese, softened Can be substituted with lower-fat or plant-based alternative.
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • 1/2 tsp ground cinnamon
  • 1/4 cup icing (from the cinnamon roll package)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In your blender, add the cinnamon rolls (tear them into smaller pieces) and blend until crumbly.
  3. In a separate bowl, combine softened cream cheese, sugar, eggs, vanilla extract, milk, and ground cinnamon. Beat until smooth and creamy.
  4. Pour the cream cheese mixture into the blender with the cinnamon roll crumbs and blend until fully combined.
  5. Grease an 8×8-inch baking dish and pour the blended mixture into the dish, spreading it evenly.
Baking
  1. Bake in the preheated oven for about 30 minutes, or until the edges are set and the center has a slight jiggle.
  2. Let the bars cool completely.
  3. Drizzle the icing from the cinnamon roll package over the top before serving.
  4. Cut into squares and serve chilled or at room temperature.

Notes

Store in an airtight container in the refrigerator for up to 5 days. Can be frozen for up to 2 months, separated with parchment paper.
