  • 2 tablespoons vegetable oil or canola oil
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon black pepper, coarsely ground Adjust to taste for desired spiciness
  • 1 tablespoon soy sauce or a Halal-friendly alternative
  • 1 tablespoon oyster sauce or a plant-based alternative
  • 1 teaspoon sugar

Method
 

Preparation
  1. Pat the chicken pieces dry with a paper towel to achieve a perfect sear.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the sliced onion and sauté for about 2-3 minutes until translucent.
  4. Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
  5. Increase heat to high and add the chicken pieces to the pan, searing for about 5-7 minutes until browned on all sides.
  6. Sprinkle the coarsely ground black pepper over the chicken, then add soy sauce, oyster sauce, sugar, and salt. Stir well to coat evenly.
  7. Reduce the heat to medium and let everything simmer for about 5 minutes.
  8. Remove from heat, taste, and adjust seasoning if necessary. Garnish with sliced green onions before serving.

Notes

Substitutions available for chicken thighs and breasts; firm tofu can be used for a vegetarian option. Ensure ingredients are prepped before cooking for a smoother process. Avoid overcrowding the pan while cooking.
