Mash the Beans
In a large mixing bowl, mash the black beans with a potato masher or fork until mostly smooth with some chunks remaining for texture.
Add Vegetables and Seasoning
Add the breadcrumbs, diced onion, red bell pepper, garlic, cilantro or parsley, egg, cumin, smoked paprika, salt, and pepper. Mix until well combined. The mixture should be thick and sticky.
Shape the Patties
Divide the mixture into 4 equal portions and shape each one into a patty about ½ inch thick. If the mixture is too wet, add a bit more breadcrumbs to reach the desired consistency.
Cook the Patties
In a large skillet, heat the olive oil over medium heat. Cook the patties for 4-5 minutes per side, or until golden brown and crispy. Be gentle when flipping, as black bean patties are more delicate than meat-based burgers.
Serve
Serve the patties on toasted buns with your favorite toppings, such as lettuce, tomato, avocado, and a slice of cheese or vegan cheese, if desired.
