Preparation
- Preheat the oven to 400°F (200°C).
- In a baking dish, place the block of feta cheese in the center. Surround it with cherry tomatoes and sprinkle the minced garlic on top.
- Drizzle with olive oil, and season generously with salt and pepper.
- Bake for about 20-25 minutes or until the feta is soft and the tomatoes are bursting.
- While the feta is baking, cook the pasta according to the package directions until al dente. Drain and set aside.
- Once the feta and tomatoes are ready, stir them together using a fork to create a creamy sauce.
- Add the cooked pasta to the baking dish and mix until everything is well coated.
- Serve hot, garnishing with fresh basil leaves.
Notes
For best results, use sweet, ripe tomatoes and avoid overcooking the pasta. Store leftovers in an airtight container for up to three days, or freeze in individual portions.
