For the Pasta
  • 12 oz Pasta (any type you prefer) Cook according to package instructions
  • 1 block (8 oz) Feta Cheese Opt for high-quality feta for the best flavor
  • 2 cups Cherry Tomatoes Feel free to mix with different types of tomatoes
  • 4 tablespoons Olive Oil More may be used for drizzling
  • 3 cloves Garlic (minced) Gives a great flavor base
  • 1 teaspoon Basil Dry or fresh, for seasoning
  • Salt and Pepper To taste
  • Crushed Red Pepper Flakes Optional, for added heat

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine the cherry tomatoes, olive oil, minced garlic, salt, pepper, and dried basil. Toss everything lightly.
  3. Place the feta cheese in the center of the dish and drizzle a bit more olive oil on top, seasoning with additional salt and pepper.
Cooking
  1. Bake in the preheated oven for 25 minutes, or until the feta is soft and tomatoes are bursting.
  2. While the feta and tomatoes are baking, boil your pasta according to package instructions. Drain and set aside.
  3. Once the feta is ready, Stir everything together in the baking dish. Add the cooked pasta and fold gently until combined.
Serving
  1. Garnish with fresh basil and a sprinkle of crushed red pepper flakes if desired. Serve hot and enjoy!

Notes

To store leftovers, let the pasta cool down and place it in an airtight container. It can stay fresh in the refrigerator for up to three days. When warming it up, adding a splash of olive oil or a bit of water can help revive the delicious creamy sauce.
