Ingredients
  

For the peach filling
  • 6 cups fresh peaches, sliced Can substitute with canned or frozen peaches if necessary.
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
For the batter
  • 1 cup flour
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1/2 cup butter, melted
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches with sugar, cinnamon, lemon juice, and cornstarch. Stir gently to coat the peaches evenly and let them marinate.
  3. In another bowl, mix together the flour, milk, baking powder, melted butter, and a pinch of salt until smooth.
Assembly
  1. Pour the peach mixture into a greased baking dish, spreading evenly.
  2. Pour the batter over the peaches, allowing it to spread out naturally.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and set.
  2. Allow to cool slightly before serving. Enjoy warm or with vanilla ice cream.

Notes

To keep cobbler fresh, store in the refrigerator for up to 3 days or freeze for 3 months. Reheat in the microwave or oven.
