  • 1 cup fresh pineapple chunks (or canned, drained)
  • 1 piece bell pepper, sliced (any color you prefer)
  • 1 cup snap peas, trimmed
Marinade
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon fresh ginger, grated (or ground ginger)
  • Salt and pepper to taste

  • Sesame seeds for garnish
  • Fresh cilantro for garnish

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the soy sauce, honey, olive oil, minced garlic, and grated ginger. Add the chicken breasts, coating them well in the marinade. Let this sit for at least 10 minutes to soak up the flavors.
Assembling and Baking
  1. Line a baking sheet with parchment paper or lightly grease it with cooking spray for easier cleanup.
  2. Place the marinated chicken breasts on one side of the sheet pan. In the same bowl, toss the pineapple, bell pepper, and snap peas with a bit of salt and pepper. Spread the vegetables on the other side of the pan, ensuring everything is in a single layer.
  3. Place the sheet pan in the preheated oven and bake for about 20-25 minutes. The chicken should reach an internal temperature of 165°F (74°C), and the vegetables should be tender yet crisp.
Serving
  1. Once cooked, remove the pan from the oven. Optionally, sprinkle sesame seeds or fresh cilantro over the dish for added flavor and presentation. Serve immediately and enjoy the tropical burst of flavors!

Notes

Marinate the chicken longer for more intense flavor. Feel free to swap in other colorful veggies like zucchini or carrots. Spoon any leftover pan juices over the chicken and veggies for a flavor boost. Monitor cooking time to avoid overcooking.
