Ingredients
Method
Cook the Gnocchi
- Bring a pot of salted water to a boil and cook the gnocchi according to package instructions for about 2-3 minutes until they float to the surface. Drain and set aside.
Cook the Chicken
- In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken breast, seasoning with salt and pepper. Cook for about 5-7 minutes until the chicken is golden brown and cooked through.
Sauté the Garlic
- Add minced garlic to the skillet, stirring for 30 seconds until fragrant.
Create the Sauce
- Pour in the chicken broth and heavy cream, stirring to combine. Allow it to simmer on low for about 5 minutes, letting it reduce slightly.
Combine Everything
- Stir in the cooked gnocchi and fresh spinach. Let it simmer until the spinach wilts. Finally, add the grated Parmesan cheese and mix until melted and creamy.
Garnish and Serve
- Garnish with fresh parsley and extra Parmesan if desired. Serve immediately and enjoy your delicious creation!
Notes
For a lighter version, swap heavy cream for half-and-half or use coconut cream for a dairy-free alternative. Once the gnocchi rise to the surface, they're done. If the sauce is too thick, add a splash of chicken broth to reach desired consistency.
