Chicken and Gnocchi
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 package (16 oz) gnocchi (store-bought)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup chicken broth (or vegetable broth for a vegetarian version)
Vegetables and Seasoning
  • 1 cup spinach (fresh)
  • 1 teaspoon Italian seasoning (or herbs of your choice)

  • Grated Parmesan cheese (for topping)
  • Fresh parsley, chopped (for garnish)

Preparation
  1. Start by boiling water in a large pot. Once boiling, cook your gnocchi according to the package instructions until they float to the top, usually taking about 2-3 minutes. Drain and set aside.
  2. In a large skillet over medium-high heat, add olive oil. Once hot, add the bite-sized chicken pieces, seasoned with salt, pepper, and Italian seasoning. Sauté until golden brown and cooked through, about 5-7 minutes.
  3. Once the chicken is fully cooked, add the minced garlic to the skillet, cooking for an additional 1 minute until the garlic is fragrant.
  4. Pour in the chicken broth and add the cooked gnocchi to the skillet. Stir gently to combine all ingredients and allow it to simmer for about 2-3 minutes, allowing the gnocchi to soak up some of that flavorful broth.
  5. Fold in the fresh spinach and cook until wilted, about 1-2 minutes.
  6. Once everything is combined, top with grated Parmesan cheese and fresh parsley. Serve immediately while warm.

Notes

Feel free to swap out the chicken for other proteins such as shrimp or a plant-based alternative. Don’t overcook the garlic to avoid bitterness. Ensure the gnocchi is well-drained before adding it to the skillet.
