Preparation
- Preheat your oven to 425°F (220°C).
- Peel your sweet potatoes and cut them into 1-inch cubes.
- In a large bowl, toss the sweet potato cubes with olive oil, salt, and black pepper until they are well-coated.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
Roasting
- Place the baking sheet in the oven and roast for 25-30 minutes, flipping halfway through until golden brown and tender.
Serving
- Once ready, remove them from the oven and taste. Feel free to add any optional toppings.
Notes
Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months. Reheat in the oven at 375°F (190°C) for about 10-15 minutes.
