Main ingredients
  • 4 medium-sized sweet potatoes Peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil Used for tossing the sweet potatoes
  • 1 teaspoon salt To taste
  • 1/2 teaspoon freshly cracked black pepper To taste

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Peel your sweet potatoes and cut them into 1-inch cubes.
  3. In a large bowl, toss the sweet potato cubes with olive oil, salt, and black pepper until they are well-coated.
  4. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
Roasting
  1. Place the baking sheet in the oven and roast for 25-30 minutes, flipping halfway through until golden brown and tender.
Serving
  1. Once ready, remove them from the oven and taste. Feel free to add any optional toppings.

Notes

Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months. Reheat in the oven at 375°F (190°C) for about 10-15 minutes.
