Preparation
- Preheat your oven to 350°F (175°C) to ensure even baking.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy—about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Slowly incorporate this dry mixture into the wet ingredients, stirring until just combined.
- Fold in the butterscotch and chocolate chips until evenly distributed.
- Drop spoonfuls of dough onto ungreased baking sheets, leaving space between each for spreading—about 2 inches apart.
Baking
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden, and the centers are set but still soft.
- Allow them to cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool completely.
Notes
For extra thick cookies, chill the dough for 30 minutes before baking. These cookies pair wonderfully with a glass of milk or a warm cup of coffee.
