  • 1 cup long-grain rice (uncooked)
  • 1 can (15 ounces) diced tomatoes (drained)
  • 1 can (10.5 ounces) condensed creamy mushroom soup (or a Halal alternative)
  • 1 cup beef broth (ensure Halal)
  • 1 small onion (chopped)
  • 1 teaspoon garlic powder
  • 1 teaspoon seasoning salt
  • 1 cup shredded cheese (your choice—cheddar works great!)
  • 1 cup mixed frozen vegetables (like peas, carrots, or corn)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef. Drain excess fat and add the chopped onion. Sauté for another 2-3 minutes until the onion is translucent.
  3. Stir in the garlic powder, seasoning salt, canned tomatoes (with liquid), and the frozen vegetables. Cook for another 2 minutes to combine flavors.
  4. In a large mixing bowl, combine the cooked beef mixture, uncooked rice, beef broth, and condensed soup. Stir well to ensure everything is mixed thoroughly.
  5. Pour the mixture into a greased 9x13 inch baking dish. Spread evenly.
Cooking
  1. Cover the dish with foil and bake for 25 minutes. Remove the foil, stir, and top with shredded cheese. Bake uncovered for another 10-15 minutes or until the cheese is bubbly and golden.
  2. Allow it to sit for 5-10 minutes before serving.

Notes

Substitutions: Ground turkey or chicken can be used as a different protein. For a vegetarian option, use plant-based ground meat while maintaining Halal compliance. Make sure to cover the dish while baking initially to help the rice cook through. Ensure rice is uncooked when adding to the casserole, as precooked rice can become mushy.
