  • 4 pieces boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup grated Asiago cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup spinach leaves (fresh or frozen) If using frozen, thaw and drain before adding.
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Chopped fresh parsley for garnish (optional)

Method
 

Preparation
  1. Season your chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
Cooking
  1. Sear the chicken for 5-7 minutes per side until golden brown and cooked through.
  2. Remove the chicken from the skillet and set aside.
  3. In the same skillet, reduce heat to medium and add minced garlic, sautéing for 1 minute until fragrant.
  4. Pour in the heavy cream, stirring to combine, and let it simmer for 2-3 minutes.
  5. Gradually add grated Asiago cheese, stirring until it melts into the sauce.
  6. Add spinach to the sauce, stirring until wilted.
  7. Return the cooked chicken breasts to the skillet and let them soak in the sauce for 1-2 minutes.
  8. Garnish with fresh parsley if desired and serve.

Notes

If you have leftovers, store in an airtight container in the refrigerator for 3-4 days. Reheat in a skillet with a splash of cream or milk to restore creaminess.
