  3. In a large mixing bowl, whisk the eggs until they’re fully combined. Add the cottage cheese, shredded cheese, garlic powder, salt, and pepper. If you’re using vegetables or herbs, fold them in gently.
  4. Transfer the mixture into your prepared baking dish, spreading it out evenly.
  5. Place the dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and the center is set.
  6. Once baked, let the dish cool for a few minutes before slicing into squares.
  7. Serve warm with additional toppings like fresh herbs or a sprinkle of your favorite seasoning.

Notes

If you don’t have cottage cheese, ricotta is a fabulous alternative. Keep an eye on the eggs as they bake to check for doneness around the 25-minute mark. Be careful not to overmix your egg mixture to maintain a light and airy texture. Leftovers can be refrigerated for up to 3 days.
