Filling
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup honey
  • 1/2 cup dried cranberries
  • 1 teaspoon cinnamon
Apples
  • 4 large apples (Granny Smith or Honeycrisp)
Topping
  • 2 tablespoons butter cut into small pieces

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Wash and core the apples, leaving about 1/2 inch at the bottom.
  3. In a bowl, mix the crumbled feta, dried cranberries, honey, and cinnamon until well combined.
Baking
  1. Place the prepared apples in a baking dish and fill them with the feta and cranberry mixture.
  2. Top each apple with a piece of butter.
  3. Cover the dish with foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until tender and golden brown.
  4. Allow to cool slightly before serving and drizzle with additional honey if desired.

Notes

For substitutions, consider goat cheese for creaminess or replace cranberries with raisins or nuts. Monitor baking time for individual apple sizes.
