- In a bowl, mix the shredded chicken with BBQ sauce until fully coated. Adjust the amount of sauce based on your taste preference.
Cooking
- Heat a skillet over medium heat and add a drizzle of olive oil.
- Place one tortilla in the skillet. Sprinkle half of the shredded cheese over the tortilla, followed by half of the BBQ chicken mixture.
- Sprinkle the remaining cheese on top, then layer another tortilla over it.
- Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip it over and cook for an additional 3-4 minutes until both sides are golden and the cheese has fully melted.
- Remove from the skillet, let it rest for a moment, then slice into wedges. Serve with your favorite dipping sauces and toppings.
Notes
If using rotisserie chicken, it's a great time-saver. Keep the skillet on moderate heat to prevent burning. Experiment with flavors like teriyaki or add vegetables for crunch. Leftovers can be stored up to 3 days in an airtight container and reheated in a skillet.
