  • 2 cups cooked chicken, shredded (grilled or rotisserie)
  • 1 cup BBQ sauce, Halal-certified (adjust to taste)
  • 1 cup shredded cheese (Mexican blend or cheddar works great)
  • 4 large flour tortillas
  • 1 tablespoon olive oil (for frying)
Optional Toppings
  • to taste diced tomatoes
  • to taste diced onions
  • to taste sliced jalapeños
  • to taste sour cream
  • to taste fresh cilantro

Method
 

Preparation
  1. In a bowl, mix the shredded chicken with BBQ sauce until fully coated. Adjust the amount of sauce based on your taste preference.
Cooking
  1. Heat a skillet over medium heat and add a drizzle of olive oil.
  2. Place one tortilla in the skillet. Sprinkle half of the shredded cheese over the tortilla, followed by half of the BBQ chicken mixture.
  3. Sprinkle the remaining cheese on top, then layer another tortilla over it.
  4. Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip it over and cook for an additional 3-4 minutes until both sides are golden and the cheese has fully melted.
  5. Remove from the skillet, let it rest for a moment, then slice into wedges. Serve with your favorite dipping sauces and toppings.

Notes

If using rotisserie chicken, it's a great time-saver. Keep the skillet on moderate heat to prevent burning. Experiment with flavors like teriyaki or add vegetables for crunch. Leftovers can be stored up to 3 days in an airtight container and reheated in a skillet.
