Ingredients

  • 2 ripe bananas mashed
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1/3 cup melted butter or vegetable oil
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips semisweet or milk chocolate

Equipment

  • Muffin tin
  • Muffin liners (optional)
  • Mixing bowls
  • Whisk
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Cooling rack

Method

  1. Preheat the Oven
  2. Preheat your oven to 350°F (175°C) and line a muffin tin with muffin liners or lightly grease the tin.
  3. Mash the Bananas
  4. In a large bowl, mash the ripe bananas with a fork until smooth but slightly chunky.
  5. Mix the Dry Ingredients
  6. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  7. Combine Wet Ingredients
  8. In another bowl, mix the melted butter (or oil) with the brown sugar until smooth. Add the egg and vanilla extract, stirring until fully combined. Fold in the mashed bananas.
  9. Combine Wet and Dry Ingredients
  10. Add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix, as this can make the muffins dense.
  11. Fold in the Chocolate Chips
  12. Gently fold in the chocolate chips, distributing them evenly throughout the batter.
  13. Fill the Muffin Tin
  14. Spoon the muffin batter into the muffin tin, filling each cup about ¾ of the way full.
  15. Bake
  16. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The tops should be golden brown.
  17. Cool
  18. Allow the muffins to cool in the tin for 5 minutes before transferring them to a cooling rack to cool completely.
