Ingredients

For the Banana Bread Cake
  • 3 pieces ripe bananas, mashed Use overripe bananas for best flavor.
  • 1/2 cup unsalted butter, softened Soften butter at room temperature.
  • 1 cup sugar
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 1/2 cups all-purpose flour
  • a pinch salt
For the Cream Cheese Frosting
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • a pinch salt

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easier removal.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add in the eggs, mashed bananas, and vanilla extract, mixing until thoroughly combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, stirring until no flour streaks remain. Be careful not to overmix!
Baking
  1. Pour the batter into your prepared cake pan and smooth the top. Bake in your preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow it to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Frosting and Serving
  1. While the cake cools, make the cream cheese frosting. In a mixing bowl, beat the softened cream cheese and butter together until smooth. Gradually add in the powdered sugar, vanilla extract, and a pinch of salt, mixing until creamy and fluffy.
  2. Once the cake is completely cooled, generously frost the top with cream cheese frosting, letting it cascade down the sides.
  3. Slice, serve, and enjoy the luscious goodness of your Banana Bread Cake with Cream Cheese Frosting!

Notes

For the best flavor, ensure your bananas are overripe. Additionally, avoid overmixing the batter to ensure a tender cake. Leftover frosting can be stored in the fridge for up to a week.
