Balsamic Peach Chicken Kabobs: A Perfect Blend of Sweet and Savory

Fire up the grill for these juicy Balsamic Peach Chicken Kabobs! With tender chicken, sweet peaches, and a flavorful balsamic glaze, they’re perfect for summer cookouts or a quick dinner.

Ingredients
  

  • 1 1/2 lbs 680g boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3 –4 ripe peaches pitted and cut into wedges
  • 1 red onion cut into chunks (optional, for added flavor)
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey or maple syrup
  • 2 teaspoons Dijon mustard
  • 2 garlic cloves minced
  • 1 teaspoon dried thyme or rosemary
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Wooden or metal skewers

Instructions
 

  • Prepare the Marinade:
  • In a bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, thyme, smoked paprika, salt, and pepper until well combined.
  • Marinate the Chicken:
  • Place the chicken cubes in a resealable bag or shallow dish. Pour half the marinade over the chicken, reserving the other half for basting. Toss to coat, then cover and refrigerate for 30 minutes to 2 hours.
  • Assemble the Kabobs:
  • Thread the marinated chicken, peach wedges, and red onion chunks (if using) onto skewers, alternating as you go.
  • Grill the Kabobs:
  • Preheat your grill to medium-high heat. Place the kabobs on the grill and cook for 10–12 minutes, turning occasionally, until the chicken is cooked through and slightly charred. Baste with the reserved marinade during the last few minutes of grilling.
  • Serve:
  • Remove the kabobs from the grill and let them rest for a few minutes. Serve warm with your favorite sides, such as rice, salad, or grilled vegetables.
