Preparation
- Preheat your oven to 350°F (175°C).
- Grease your muffin tins or line them with paper liners.
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
- In another bowl, cream the softened butter until it’s smooth and fluffy.
- Add eggs, milk, and vanilla extract to the butter and mix until fully incorporated.
- Gradually add the dry mixture to the wet ingredients and stir gently until just combined.
- In a small bowl, combine equal parts flour, brown sugar, and cinnamon, then mix in melted butter until crumbly for the streusel topping.
- Spoon the batter into the muffin tins, filling each about 2/3 full and sprinkle the streusel topping generously over each muffin.
Baking
- Place the muffin tin in the oven and bake for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Allow them to cool in the tin for a few minutes before transferring them to a wire rack.
Notes
Store muffins in an airtight container at room temperature for up to 3 days. For longer storage, freeze in a single layer on a baking sheet before transferring to a freezer bag (up to a month). Reheat in the oven for 10 minutes or in the microwave for 15-20 seconds.
