Ingredients
  

Muffin Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened Should be at room temperature
  • 1 cup milk Substitutable with almond or soy milk for dairy-free version
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
Streusel Topping
  • 1 cup streusel topping (made from flour, butter, brown sugar, and cinnamon) Mix equal parts flour, brown sugar, and cinnamon, with melted butter until crumbly

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease your muffin tins or line them with paper liners.
  3. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  4. In another bowl, cream the softened butter until it’s smooth and fluffy.
  5. Add eggs, milk, and vanilla extract to the butter and mix until fully incorporated.
  6. Gradually add the dry mixture to the wet ingredients and stir gently until just combined.
  7. In a small bowl, combine equal parts flour, brown sugar, and cinnamon, then mix in melted butter until crumbly for the streusel topping.
  8. Spoon the batter into the muffin tins, filling each about 2/3 full and sprinkle the streusel topping generously over each muffin.
Baking
  1. Place the muffin tin in the oven and bake for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  2. Allow them to cool in the tin for a few minutes before transferring them to a wire rack.

Notes

Store muffins in an airtight container at room temperature for up to 3 days. For longer storage, freeze in a single layer on a baking sheet before transferring to a freezer bag (up to a month). Reheat in the oven for 10 minutes or in the microwave for 15-20 seconds.
