Ingredients
  

For the Chicken
  • 4 pieces chicken thighs You can substitute with chicken breasts if desired.
For the Marinade
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sesame oil
For Garnish
  • to taste Green onions Chopped, for serving.

Method
 

Preparation
  1. Preheat the Oven: Start by preheating your oven to 375°F (190°C).
  2. Prepare the Marinade: In a large mixing bowl, combine soy sauce, pineapple juice, ketchup, brown sugar, minced garlic, grated ginger, and sesame oil. Whisk until well blended.
  3. Marinate the Chicken: Add the chicken thighs to the marinade, making sure they are thoroughly coated. Let them marinate for at least 30 minutes; overnight is best.
  4. Arrange for Baking: Place the marinated chicken on a baking tray lined with parchment paper and pour remaining marinade over it.
Cooking
  1. Bake: Place the tray in the preheated oven and bake for about 40 minutes, until the chicken reaches an internal temperature of 165°F (75°C).
  2. Garnish & Serve: Once baked, remove the chicken from the oven, let it rest for a few minutes, and top with chopped green onions before serving.

Notes

For perfect chicken, monitor cooking time and avoid overbaking. Refrigerate leftovers for up to 3 days, and reheat in the oven at 350°F (175°C) or microwave for a minute or two.
