  • 4 medium-sized tart apples (such as Granny Smith)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup unsalted butter (softened)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup raisins or sultanas (optional) Soak in warm water for about 10 minutes, then drain.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
  2. Peel, core, and roughly chop the apples.
  3. In a mixing bowl, combine flour, sugar, baking soda, baking powder, cinnamon, and salt.
  4. In another bowl, cream the softened butter until light and fluffy. Add the eggs one at a time, mixing until well combined. Stir in the vanilla extract.
  5. Slowly add the dry ingredients to the butter mixture, mixing until just combined. Gently fold in the chopped apples (and raisins, if using).
  6. Pour the batter into the prepared cake pan and smooth the top.
Baking
  1. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
