Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy, about 2 to 3 minutes.
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing until just blended.
- Gently fold in the diced apples and rolled oats until evenly distributed throughout the dough.
- Using a spoon or cookie scoop, drop dough about 2 inches apart on the prepared baking sheet.
Baking
- Bake in the preheated oven for 12 to 15 minutes, or until the edges are golden and the center looks set.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack. Enjoy warm!
Notes
These cookies are great on their own but pair well with vanilla ice cream or caramel sauce. Store in an airtight container for up to 5 days at room temperature or freeze for up to 3 months.
