Ingredients
  

For the crust
  • 2 cups all-purpose flour Ensure it's sifted
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
For the cheesecake filling
  • 2 cups cream cheese, softened Should be at room temperature
  • 1 cup granulated sugar
  • 2 large eggs eggs At room temperature
  • 1 teaspoon vanilla extract
For the apple topping
  • 2 cups apples, peeled and diced Choose your favorite type of apple
  • 1 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, softened butter, powdered sugar, and salt. Mix until a crumbly dough forms.
  3. Press this mixture evenly into the bottom of a greased 9x13 inch baking pan.
  4. Bake for 10-12 minutes or until lightly golden.
Cheesecake Filling
  1. In a separate bowl, beat the softened cream cheese and granulated sugar until smooth.
  2. Add the eggs one at a time, mixing thoroughly after each addition.
  3. Mix in the vanilla extract until combined.
Apple Preparation
  1. In another bowl, toss the diced apples with cinnamon until evenly coated.
Assembly and Baking
  1. Pour the cheesecake filling over the pre-baked crust.
  2. Top generously with the cinnamon apples.
  3. Bake for an additional 30-35 minutes, or until the cheesecake is set and the apples are tender.
Cooling
  1. Let the bars cool in the pan before slicing into squares. Refrigerate to ensure clean cuts.

Notes

For a dairy-free version, substitute with vegan cream cheese. You can also use coconut sugar instead of granulated sugar for a lower glycemic index option.
