Ingredients
  

Dry Ingredients
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 cup brown sugar, packed
  • 1/2 cup apple butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
For Rolling
  • 1/2 cup sugar
  • 2 tablespoons ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg until well combined. Set aside.
  3. In a large mixing bowl, cream together the softened butter, sugar, and brown sugar until the mixture is light and fluffy. Add in the apple butter, eggs, and vanilla extract, mixing until everything is well combined.
  4. Gradually add the flour mixture to the wet ingredients and mix until just combined. Make sure not to overmix, as this could result in tougher cookies.
  5. In a small bowl, mix together 1/2 cup sugar and 2 tablespoons cinnamon for rolling.
  6. Using a cookie scoop or your hands, form balls of dough, roughly 1-2 inches in diameter.
  7. Roll each ball in the sugar-cinnamon mixture until well coated and place them on the prepared baking sheets, spacing them about 2 inches apart.
Baking
  1. Place the baking sheets in the oven and bake for 10-12 minutes, or until the edges are lightly golden.
  2. Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For substitutions, you can switch out the apple butter with pumpkin puree for a different flavor. To keep cookies chewy, slightly underbake if necessary.
