Method
- Preheat oven to 175°C (350°F). Line baking sheets with parchment paper.
- Mix dry ingredients:
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Cream butter and sugars:
- In a large bowl, cream softened butter with granulated sugar and brown sugar until light and fluffy (2–3 minutes).
- Add wet ingredients:
- Beat in egg, vanilla extract, and apple butter until smooth.
- Combine:
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Chill the dough for 30 minutes (optional but helps with shaping and flavor).
- Roll in cinnamon sugar:
- Mix cinnamon and sugar in a small bowl.
- Scoop dough into 1½ tablespoon-sized balls, roll in the cinnamon sugar, and place on baking sheets about 5 cm apart.
- Bake:
- Bake for 10–12 minutes, until edges are set and centers are still soft.
- Let cool on the pan for 5 minutes, then transfer to a wire rack.
Notes
Use homemade or store-bought apple butter — either works great.
Cookies stay soft for days in an airtight container.
Add white chocolate chips or chopped pecans for an extra treat.
