Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent.
- Stir in the butternut squash, carrots, and green beans. Cook for an additional 5 minutes.
- In a separate bowl, mix the cream of mushroom soup and beef broth until well combined. Pour this mixture into the beef and vegetable skillet, stirring until everything is well coated.
- Add the dried thyme, and season with salt and pepper to taste.
- Transfer the mixture into a greased baking dish. Top with a generous layer of cheddar cheese.
Baking
- Bake in the preheated oven for about 30 minutes or until the cheese is melted and bubbly.
- Let it cool for a few minutes, then serve warm and enjoy!
Notes
Feel free to swap out vegetables based on what you have available. Cheese variations like gouda or mozzarella can be used for a different twist.
