Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • ½ cup almond flour
  • ½ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 1 cup milk
  • ½ cup unsalted butter, melted
  • 1 teaspoon almond extract
Toppings
  • ½ cup sliced almonds for topping

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the all-purpose flour, almond flour, granulated sugar, baking powder, and salt.
  3. In another bowl, whisk together the eggs, milk, melted butter, and almond extract until smooth.
  4. Pour the wet mixture into the dry ingredients, and stir until just combined; be careful not to overmix.
  5. Using a scoop or spoon, fill each muffin liner about three-quarters full with the batter.
  6. Sprinkle sliced almonds generously over the top of each muffin.
Baking
  1. Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  2. Once baked, remove from the oven and allow to cool for a few minutes before transferring to a wire rack. Enjoy warm or store for later.

Notes

For serving, pair with a light fruit salad or a cup of coffee. You can also spread almond butter or jam on top for a treat. To store, keep in an airtight container in the refrigerator for up to three days, or freeze for up to two months.
