Preparation
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, combine the all-purpose flour, almond flour, granulated sugar, baking powder, and salt.
- In another bowl, whisk together the eggs, milk, melted butter, and almond extract until smooth.
- Pour the wet mixture into the dry ingredients, and stir until just combined; be careful not to overmix.
- Using a scoop or spoon, fill each muffin liner about three-quarters full with the batter.
- Sprinkle sliced almonds generously over the top of each muffin.
Baking
- Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, remove from the oven and allow to cool for a few minutes before transferring to a wire rack. Enjoy warm or store for later.
Notes
For serving, pair with a light fruit salad or a cup of coffee. You can also spread almond butter or jam on top for a treat. To store, keep in an airtight container in the refrigerator for up to three days, or freeze for up to two months.
