Air Fryer Zucchini Fries Recipe

Crispy and delicious, these air fryer zucchini fries are a healthier alternative to traditional fries! Perfectly seasoned and easy to make, they’re a fantastic snack or side.

Equipment

  • Air fryer
  • Mixing bowls
  • Knife
  • Whisk
  • Tongs or fork

Ingredients
  

  • 2 medium zucchini cut into fries (about 3-4 inches long and ½-inch thick)
  • 2 large eggs
  • ½ cup breadcrumbs Panko or Italian seasoned
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray

Instructions
 

  • Prepare the Zucchini
  • Wash and dry the zucchini. Slice them into fry-sized pieces, about 3-4 inches long and ½-inch thick.
  • Set Up Breading Station
  • In a shallow bowl, beat the eggs. In another bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • Coat the Zucchini
  • Dip each zucchini fry into the beaten eggs, allowing any excess to drip off. Then coat the fry in the breadcrumb mixture, pressing lightly to ensure the coating sticks. Repeat with all zucchini pieces.
  • Preheat and Arrange in Air Fryer
  • Preheat the air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray, then arrange the zucchini fries in a single layer without overlapping (you may need to cook in batches).
  • Air Fry the Zucchini Fries
  • Air fry at 400°F for 8-10 minutes, turning halfway through, until the fries are golden and crispy.
  • Serve
  • Remove the zucchini fries from the air fryer and serve immediately with your favorite dipping sauce.
