Air Fryer Zucchini Chips Recipe

These crispy air fryer zucchini chips are a healthy and delicious snack or side! Made with simple ingredients and ready in minutes, they’re the perfect low-carb alternative to traditional chips.

Ingredients
  

  • 1 large zucchini thinly sliced (about ⅛-inch thick)
  • 1 tablespoon olive oil
  • ½ cup breadcrumbs Panko or Italian seasoned
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray

Instructions
 

  • Preheat Air Fryer
  • Preheat your air fryer to 400°F (200°C) for a few minutes while preparing the zucchini.
  • Prepare the Zucchini
  • Slice the zucchini into thin rounds, about ⅛ inch thick. Pat the slices dry with a paper towel to remove excess moisture, which helps them crisp up in the air fryer.
  • Coat the Zucchini
  • In a mixing bowl, toss the zucchini slices with olive oil until evenly coated.
  • Season the Breadcrumbs
  • In another bowl, mix the breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and pepper.
  • Dredge the Zucchini
  • Dip each zucchini slice into the breadcrumb mixture, pressing lightly to help the crumbs stick. Set aside on a plate as you coat each piece.
  • Air Fry the Zucchini
  • Lightly spray the air fryer basket with cooking spray. Arrange the zucchini slices in a single layer in the air fryer basket, ensuring they do not overlap. Cook at 400°F (200°C) for 8-10 minutes, flipping halfway through, until the chips are golden and crispy. Depending on the size of your air fryer, you may need to cook in batches.
  • Serve
  • Remove the zucchini chips from the air fryer and let cool slightly. Serve immediately, optionally with your favorite dipping sauce.
