Preparation
- Preheat your oven to 250°F (120°C) and line a large baking sheet with parchment paper.
- In a medium saucepan, melt butter over medium heat. Once melted, stir in brown sugar and corn syrup.
- Bring the mixture to a boil while stirring continuously. Let it boil for about 2 minutes without stirring.
- Remove from heat and carefully stir in the vanilla extract, baking soda, and salt. The mixture will bubble up, so be cautious!
- In a large mixing bowl, combine the Rice Chex cereal and the toffee mixture. Toss gently until the cereal is evenly coated.
- Spread the coated cereal evenly onto the prepared baking sheet.
- Bake in the preheated oven for 1 hour, stirring every 15 minutes for even toasting.
- Once it’s done, remove from the oven and let it cool. If desired, sprinkle chocolate chips and nuts over the mix while it’s still warm. Allow to cool completely before breaking it into pieces.
Notes
Use fresh ingredients for the best flavor. Feel free to customize your mix with different nuts or dried fruits. Keep an eye on the cooking time to avoid over-browning. Store in an airtight container to maintain its crunchiness.
