Ingredients
  

For the skillet
  • 2 tablespoons Olive oil Divided for cooking sausage and onions
  • 4 links Sausage (your choice of turkey or chicken sausage) Use your preferred type of sausage
  • 2-3 medium Potatoes, diced About 2-3 medium-sized
  • 1 cup Broccoli florets Fresh or frozen
  • 1 medium Onion, chopped Chopped into bite-sized pieces
  • 2 cloves Garlic, minced
  • to taste Seasoning (salt, pepper, Italian herbs) Your choice of seasoning

Preparation
  1. Wash and dice your potatoes and chop the onion into bite-sized pieces. Gather all your ingredients before you begin cooking for a smooth process.
Cooking
  1. In your skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausages and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  2. In the same skillet, add the chopped onion and the remaining olive oil. Sauté until the onions are translucent, around 3-4 minutes.
  3. Toss in the diced potatoes. Season with salt and pepper, then cover and cook for about 10 minutes, stirring occasionally, until the potatoes are fork-tender.
  4. Add minced garlic and broccoli florets to the skillet. Stir everything together and cover again for an additional 5-7 minutes, until the broccoli is tender and vibrant.
  5. Return the cooked sausage to the skillet. Stir to combine all ingredients, letting them warm up together for another 2-3 minutes.
