Preparation
- Gather all your ingredients. Slice your preferred toppings if using fresh vegetables.
Assembly
- Lay one flour tortilla on a clean surface. Spread about ¼ cup of pizza sauce on half of the tortilla. Sprinkle with ½ cup of mozzarella cheese and add your pepperoni slices on top.
Cooking
- Fold the tortilla over to create a half-moon shape. In a non-stick skillet, heat about a teaspoon of olive oil over medium heat. Once hot, place the quesadilla into the skillet.
- Cook for 3-4 minutes on one side until golden brown and crispy. Carefully flip using a spatula and cook for another 3-4 minutes on the other side.
Serving
- Once both sides are crispy and the cheese is melted, transfer the quesadilla to a cutting board. Allow it to rest for a minute, then slice into wedges and serve with additional pizza sauce on the side for dipping.
Notes
Substitutions include using halal chicken slices, turkey pepperoni, or a veggie mix like bell peppers and mushrooms. Ensure your skillet isn’t too hot when cooking.
