      Slow Cooker Chicken Tacos are a simple, no-fuss way to enjoy a flavorful Mexican meal with minimal effort. The chicken is cooked low and slow in a blend of spices until it’s tender and easy to shred. This versatile dish can be served in soft tortillas, crispy shells, or over rice for a satisfying meal.       Equipment:

      • Slow Cooker
      • Fork for shredding

      • Knife and cutting board

      Ingredients:

      • 4 boneless, skinless chicken breasts (or thighs for more flavor)
      • 1 packet taco seasoning (or homemade taco seasoning)
      • 1 cup salsa (store-bought or homemade)
      • 1 tablespoon olive oil
      • 1 teaspoon cumin
      • 1 teaspoon garlic powder
      • ½ teaspoon chili powder
      • Salt and pepper to taste
      • 1 cup chicken broth or water

      For Serving:

      • Soft or hard taco shells
      • Shredded lettuce
      • Diced tomatoes
      • Shredded cheese
      • Sour cream
      • Avocado slices
      • Fresh cilantro (optional)
      • Lime wedges

       

       

      Instructions:

      1. Prepare the Chicken:
        Place the chicken breasts into the slow cooker. Season them with taco seasoning, cumin, garlic powder, chili powder, salt, and pepper. Pour the salsa and chicken broth (or water) over the top.
      2. Cook:
        Cover the slow cooker and set it to cook on low for 6–7 hours or on high for 3–4 hours. The chicken should be tender and easily shred with a fork.
      3. Shred the Chicken:
        Once the chicken is fully cooked, remove it from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker, mixing it with the juices for extra flavor. Taste and adjust seasoning if needed.
      4. Serve:
        Warm your taco shells according to package instructions. Fill each shell with the shredded chicken and top with your favorite taco toppings such as lettuce, tomatoes, cheese, sour cream, avocado, cilantro, and a squeeze of lime.

      Tips:

      • For added flavor, you can add diced onions or bell peppers to the slow cooker with the chicken.
