      Roasted Red Potatoes Recipe

      Roasted red potatoes are a versatile and crowd-pleasing side dish that pairs well with everything from roasted meats to grilled vegetables.       Ingredients:

      • 2 pounds red potatoes, washed and quartered
      • 3 tablespoons olive oil
      • 3 cloves garlic, minced
      • 1 teaspoon dried rosemary or thyme (or both)
      • ½ teaspoon paprika (optional, for color)
      • Salt and black pepper to taste
      • Fresh parsley, chopped (optional, for garnish)

       

       

      Instructions:

      1. Preheat the Oven:
        • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
      2. Prepare the Potatoes:
        • Cut the red potatoes into evenly sized quarters to ensure even cooking.
      3. Season the Potatoes:
        • In a large mixing bowl, combine the potatoes, olive oil, garlic, rosemary or thyme, paprika (if using), salt, and pepper. Toss until the potatoes are well coated.
      4. Arrange on the Baking Sheet:
        • Spread the potatoes in a single layer on the prepared baking sheet. Make sure they are not overcrowded to promote even roasting.
      5. Roast the Potatoes:
        • Roast in the preheated oven for 25–30 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the edges.
      6. Garnish and Serve:
        • Remove from the oven and sprinkle with fresh parsley if desired. Serve warm.

      Tips:

      • For extra crispiness, soak the potato pieces in cold water for 30 minutes before roasting, then pat them dry thoroughly.
      • Experiment with different seasonings, such as chili powder for spice or Parmesan cheese for a savory twist.
