      Roasting broccoli brings out its natural sweetness and creates crispy edges that are simply irresistible. This quick and easy recipe is a foolproof way to turn this humble vegetable into a show-stopping side dish.       • Mixing bowl
      • Tongs or spatula

      Ingredients:

      • 1 lb fresh broccoli florets (about 1 large head)
      • 2 tablespoons olive oil
      • ½ teaspoon garlic powder (optional)
      • ½ teaspoon paprika or chili flakes (optional for spice)
      • Salt and pepper, to taste
      • 1 tablespoon lemon juice (optional)
      • Grated Parmesan or nutritional yeast (optional garnish)

       

       

      Instructions:

      1. Preheat the Oven:
        • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup.
      2. Prepare the Broccoli:
        • Wash and thoroughly dry the broccoli florets. Cut them into bite-sized pieces, ensuring similar sizes for even cooking.
      3. Season the Broccoli:
        • In a mixing bowl, toss the broccoli with olive oil, garlic powder, paprika or chili flakes (if using), salt, and pepper until evenly coated.
      4. Roast the Broccoli:
        • Spread the seasoned florets in a single layer on the baking sheet, ensuring they are not crowded.
        • Roast for 20–25 minutes, flipping halfway through, until the broccoli is tender and the edges are crispy and browned.
      5. Finish and Serve:
        • Remove the broccoli from the oven and drizzle with lemon juice for brightness. Sprinkle with Parmesan or nutritional yeast if desired. Serve warm.

      Tips:

      • For added crunch, sprinkle breadcrumbs over the broccoli before roasting.
      • Add sliced garlic or a sprinkle of sesame seeds before roasting for extra flavor.
      • If you’re in a hurry, you can roast at 450°F (232°C) for a shorter time, around 15 minutes, but keep an eye on it to avoid burning.
