      Ingredients

      • 3 cups Rice Krispies cereal
      • 1/2 cup creamy peanut butter
      • 1/2 cup light corn syrup (or honey for a natural option)
      • 1/2 cup granulated sugar
      • 1 teaspoon vanilla extract
      • 1 cup semi-sweet chocolate chips
      • 1 tablespoon coconut oil (optional, for smoother chocolate topping)

      Equipment

      • Medium saucepan
      • Large mixing bowl
      • 8×8-inch baking dish (or similar size)
      • Parchment paper

      Instructions

      Step 1: Prepare Your Dish

      1. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Step 2: Make the Peanut Butter Mixture

      1. In a medium saucepan, combine the corn syrup and granulated sugar. Heat over medium heat, stirring frequently, until the sugar dissolves and the mixture just begins to bubble (do not boil).
      2. Remove from heat and stir in the peanut butter and vanilla extract until smooth.

      Step 3: Combine with Cereal

      1. In a large mixing bowl, pour the peanut butter mixture over the Rice Krispies cereal.
      2. Gently fold together until the cereal is evenly coated.

Step 4: Press Into the Dish

      1. Transfer the mixture to the prepared baking dish.
      2. Use a spatula or lightly greased hands to press it firmly and evenly into the dish.

Step 5: Add the Chocolate Topping

      1. Melt the chocolate chips with coconut oil (if using) in a microwave-safe bowl in 20-second intervals, stirring until smooth.
      2. Spread the melted chocolate evenly over the cereal layer.

      Step 6: Chill and Slice

      1. Refrigerate the dish for about 30 minutes, or until the chocolate is set.
      2. Once firm, lift the treats out using the parchment paper and cut into squares or bars.

      Tips

      • Use crunchy peanut butter for added texture.
      • Add mini marshmallows or chopped nuts for a fun twist.
      • Store leftovers in an airtight container at room temperature or in the fridge for a firmer texture.
