      Mango Sago is a classic Asian dessert that brings together tropical mango, silky coconut milk, and the chewy texture of sago pearls for a refreshing and indulgent treat.       Ingredients

      • 1/2 cup sago pearls (small tapioca pearls)
      • 2-3 ripe mangoes, diced (reserve some for garnish)
      • 1 1/2 cups coconut milk (full-fat for creaminess)
      • 1/2 cup condensed milk (adjust sweetness to taste)
      • 1/2 cup water (for blending mango)
      • 1/4 teaspoon salt
      • Crushed ice or ice cubes (optional, for serving)

      Equipment

      • Medium saucepan
      • Strainer
      • Blender or food processor
      • Mixing bowl
      • Serving bowls or glasses

      Instructions

      Step 1: Cook the Sago

      1. Bring a pot of water to a boil and add the sago pearls. Stir occasionally to prevent sticking.
      2. Cook for about 10-12 minutes or until the sago turns mostly translucent (some white dots in the center are fine).
      3. Turn off the heat, cover the pot, and let the sago sit for another 5 minutes to finish cooking.
      4. Strain the sago and rinse under cold water to remove excess starch. Set aside.

      Step 2: Prepare the Mango Puree

      1. Peel and dice the mangoes, reserving some pieces for garnish.
      2. Blend the mango chunks with 1/2 cup of water until smooth. Set aside.

      Step 3: Combine the Ingredients

      1. In a mixing bowl, combine the coconut milk, condensed milk, and salt. Stir well to mix.
      2. Add the cooked sago and mango puree to the coconut milk mixture. Mix until evenly combined.
      3. Taste and adjust sweetness if needed by adding more condensed milk.

      Step 4: Chill and Serve

      1. Chill the Mango Sago mixture in the refrigerator for at least 1 hour to allow the flavors to meld.
      2. To serve, spoon the dessert into individual bowls or glasses. Top with diced mango and crushed ice if desired.

      Tips

      • For an extra tropical twist, you can add diced fresh fruits like kiwi, strawberries, or pomelo to the dessert.
      • If you prefer a less creamy version, dilute the coconut milk with a bit of water.
      • Use ripe, sweet mangoes like Ataulfo or Alphonso for the best flavor.
