      Ingredients

      • 1 cup (2 sticks) unsalted butter, softened
      • 1 cup granulated sugar
      • 1/2 cup light brown sugar, packed
      • 2 large eggs
      • 2 teaspoons vanilla extract
      • 2 3/4 cups all-purpose flour
      • 1 teaspoon baking soda
      • 1/2 teaspoon baking powder
      • 1/2 teaspoon salt
      • 1 1/2 cups Fruity Pebbles cereal (plus extra for topping)
      • 1 cup white chocolate chips (optional, but delicious!)

      Equipment Needed

      • Hand or stand mixer
      • Baking sheets

      Instructions

      1. Prepare the Dough:
        • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
        • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).
        • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
      2. Combine Dry Ingredients:
        • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
        • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
      3. Fold in the Fruity Pebbles:
        • Gently fold in the Fruity Pebbles cereal and white chocolate chips (if using) until evenly distributed.
      4. Scoop and Bake:
        • Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheets, spacing them about 2 inches apart.
        • Lightly press extra Fruity Pebbles on top of each dough ball for a colorful finish.
        • Bake for 10–12 minutes, or until the edges are lightly golden and the centers look slightly underbaked.
      5. Cool and Serve:
        • Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

      Tips for Success

      • Don’t overmix the dough to keep the cookies soft and tender.
      • For chewier cookies, slightly underbake them and let them finish setting on the hot baking sheet.
