Ingredients

- Prepare the Pineapple:
- If using fresh pineapple, peel and slice it into rings about 1/2-inch thick. If using canned pineapple, drain and pat the rings dry with paper towels to remove excess moisture.
- Make the Batter:
- In a medium bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon (if using).
- Add the milk, egg, and vanilla extract to the dry ingredients and whisk until smooth, forming a thick batter.
- Heat the Oil:
- In a deep frying pan or skillet, heat about 1–2 inches of vegetable oil over medium-high heat. The oil should reach around 350°F (175°C). You can test the temperature by dropping a small spoonful of batter into the oil—it should sizzle immediately.
- Fry the Pineapple Rings:
- Dip each pineapple ring into the batter, ensuring it is evenly coated.
- Carefully place the battered pineapple rings into the hot oil, frying a few at a time (don’t overcrowd the pan).
- Fry for 2–3 minutes per side, or until golden brown and crispy. Use tongs or a slotted spoon to flip the rings halfway through.
- Drain and Serve:
- Once the fritters are golden and crispy, remove them from the oil and place them on a plate lined with paper towels to drain excess oil.
