It’s easy to prepare and will quickly become a favorite in your meal rotation.

      Ingredients

      • 1 lb large shrimp, peeled and deveined
      • 1 tablespoon olive oil
      • 1 tablespoon chili powder
      • 1 teaspoon cumin
      • 1/2 teaspoon smoked paprika
      • 1/2 teaspoon garlic powder
      • Salt and pepper, to taste
      • 1 cup cooked rice (white, brown, or cauliflower rice)
      • 1/2 cup black beans, rinsed and drained
      • 1/2 cup corn kernels (fresh or frozen)
      • 1 small avocado, diced
      • 1/4 cup diced red onion
      • 1/4 cup chopped cilantro
      • 1/4 cup shredded cheese (optional)
      • Lime wedges, for serving
      • Sour cream or Greek yogurt (optional, for topping)

      Equipment

      • Skillet or grill pan
      • Medium bowl
      • Cutting board
      • Knife
      • Spoon or spatula

      Instructions

      1. Prepare the Shrimp: In a medium bowl, combine the shrimp with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Toss to coat the shrimp evenly in the spices.
      2. Cook the Shrimp: Heat a skillet or grill pan over medium-high heat. Cook the seasoned shrimp for 2-3 minutes per side, or until they turn pink and are fully cooked through. Remove from heat and set aside.
      3. Assemble the Bowl: In a bowl, layer the cooked rice as the base. Add black beans, corn, diced avocado, and cooked shrimp on top.
      4. Garnish: Sprinkle chopped red onion, cilantro, and shredded cheese (if using) over the top. Add a dollop of sour cream or Greek yogurt if desired.
      5. Serve: Serve the Fiesta Shrimp Bowl with lime wedges on the side for a fresh, zesty kick.

      Tips

      • Feel free to add other toppings like diced tomatoes, jalapeños, or a drizzle of salsa for extra flavor.
      • You can substitute the shrimp with chicken or tofu for a different protein option.
      • If you prefer a spicier bowl, add some chili flakes or hot sauce to the shrimp seasoning.
      • For a lighter version, try cauliflower rice instead of regular rice.
      • These bowls are perfect for meal prep – just store the components separately and assemble when ready to eat.
