      • 1 (15-ounce) can whole kernel corn, drained
      • 1 (15-ounce) can creamed corn
      • 1 cup sour cream
      • ½ cup unsalted butter, melted
      • 1 (8.5-ounce) package cornbread mix (e.g., Jiffy)
      • 1 cup shredded cheddar cheese
      • ½ teaspoon salt (optional, to taste)
      • ½ teaspoon black pepper
      • Fresh parsley or chives, chopped (optional, for garnish)

       

       

      Instructions:

      1. Preheat the Oven:
        Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick spray.
      2. Mix the Ingredients:
        In a large mixing bowl, combine the whole kernel corn, creamed corn, sour cream, melted butter, and cornbread mix. Stir until just combined.
      3. Add the Cheese and Seasoning:
        Fold in the shredded cheddar cheese, salt, and black pepper. Mix gently to distribute the cheese evenly.
      4. Pour and Spread:
        Pour the mixture into the prepared baking dish. Use a spatula to spread it out evenly.
      5. Bake:
        Bake for 45–50 minutes, or until the top is golden brown and the center is set. A toothpick inserted into the center should come out clean.
      6. Garnish and Serve:
        Let the casserole cool for 5 minutes before serving. Garnish with fresh parsley or chives if desired.
