      Breakfast tacos are a fun and versatile way to enjoy breakfast.       Ingredients

      • 4 small flour or corn tortillas
      • 4 large eggs
      • 2 tbsp milk (optional, for creamier eggs)
      • 1/2 tsp salt
      • 1/4 tsp black pepper
      • 1 tbsp butter or oil
      • 1/2 cup cooked bacon, sausage, or chorizo (optional)
      • 1/2 cup shredded cheese (cheddar, Monterey Jack, or your choice)
      • 1/2 cup diced vegetables (e.g., bell peppers, onions, tomatoes)
      • 1/2 avocado, sliced (optional)
      • Fresh cilantro, for garnish
      • Salsa or hot sauce, for serving

      Instructions

      1. Scramble the Eggs:
      In a mixing bowl, whisk together the eggs, milk (if using), salt, and pepper. Heat a non-stick skillet over medium heat and melt the butter. Pour in the egg mixture and gently scramble until soft and fluffy. Remove from heat.

      2. Warm the Tortillas:
      Warm the tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap them in a damp paper towel and microwave for 20-30 seconds.

      3. Assemble the Tacos:

      • Place a portion of scrambled eggs on each tortilla.
      • Add your choice of cooked bacon, sausage, or chorizo.
      • Sprinkle with shredded cheese and top with diced vegetables and avocado slices.

      4. Garnish and Serve:
      Garnish with fresh cilantro and serve with salsa or hot sauce on the side.
