Take your grilling game to the next level with these Balsamic Peach Chicken Kabobs! Juicy chicken chunks and ripe, sweet peaches come together in a savory balsamic marinade that caramelizes beautifully on the grill. Whether you’re hosting a summer barbecue or looking for an easy dinner idea, these kabobs will have everyone coming back for seconds.

      Ingredients

      • 1 1/2 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
      • 3–4 ripe peaches, pitted and cut into wedges
      • 1 red onion, cut into chunks (optional, for added flavor)
      • 2 tablespoons olive oil
      • 2 tablespoons balsamic vinegar
      • 2 tablespoons honey or maple syrup
      • 2 teaspoons Dijon mustard
      • 2 garlic cloves, minced
      • 1 teaspoon dried thyme or rosemary
      • 1/2 teaspoon smoked paprika
      • Salt and black pepper to taste
      • Wooden or metal skewers

      Equipment Needed

      • Mixing bowl
      • Whisk
      • Grill or grill pan

      Instructions

      1. Prepare the Marinade:
In a bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, thyme, smoked paprika, salt, and pepper until well combined.
      2. Marinate the Chicken:
Place the chicken cubes in a resealable bag or shallow dish. Pour half the marinade over the chicken, reserving the other half for basting. Toss to coat, then cover and refrigerate for 30 minutes to 2 hours.
      3. Assemble the Kabobs:
Thread the marinated chicken, peach wedges, and red onion chunks (if using) onto skewers, alternating as you go.
      4. Grill the Kabobs:
Preheat your grill to medium-high heat. Place the kabobs on the grill and cook for 10–12 minutes, turning occasionally, until the chicken is cooked through and slightly charred. Baste with the reserved marinade during the last few minutes of grilling.
      5. Serve:
Remove the kabobs from the grill and let them rest for a few minutes. Serve warm with your favorite sides, such as rice, salad, or grilled vegetables.

      Tips for Success

      • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
      • Choose peaches that are ripe but firm, so they hold up well on the grill.
      • Add other seasonal fruits or veggies like bell peppers or pineapple for variety.

These Balsamic Peach Chicken Kabobs are the epitome of summer on a stick. The smoky grill marks, sweet and tangy glaze, and juicy chicken make them an instant hit at any gathering. Pair them with a crisp salad or a chilled glass of white wine for the ultimate warm-weather meal.
