      Ingredients:

      • 1 large zucchini, thinly sliced (about ⅛-inch thick)
      • 1 tablespoon olive oil
      • ½ cup breadcrumbs (Panko or Italian seasoned)
      • ¼ cup grated Parmesan cheese
      • ½ teaspoon garlic powder
      • ½ teaspoon paprika
      • Salt and pepper, to taste

      Instructions:

      1. Preheat Air Fryer
        Preheat your air fryer to 400°F (200°C) for a few minutes while preparing the zucchini.
      2. Prepare the Zucchini
        Slice the zucchini into thin rounds, about ⅛ inch thick. Pat the slices dry with a paper towel to remove excess moisture, which helps them crisp up in the air fryer.
      3. Coat the Zucchini
        In a mixing bowl, toss the zucchini slices with olive oil until evenly coated.
      4. Season the Breadcrumbs
        In another bowl, mix the breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and pepper.
      5. Dredge the Zucchini
        Dip each zucchini slice into the breadcrumb mixture, pressing lightly to help the crumbs stick. Set aside on a plate as you coat each piece.
      6. Air Fry the Zucchini
        Lightly spray the air fryer basket with cooking spray. Arrange the zucchini slices in a single layer in the air fryer basket, ensuring they do not overlap. Cook at 400°F (200°C) for 8-10 minutes, flipping halfway through, until the chips are golden and crispy. Depending on the size of your air fryer, you may need to cook in batches.
      7. Serve
